Rub spice evenly over surface of beef. Place meat in shallow roasting pan. Insert thermometer, not touching fat. Don't add water
Roast uncovered for 2 1/2 - 3 hours
Take roast out of the oven when meat thermometer registers 170 For more
Trim excess fat and carve into 1/4 inch slices
