Szechuan Peppered Beef Roast

Ingredients

  • 2 tsp ground black pepper
  • 1/2 tsp Szechuan pepper powder
  • 2 tsp mustard powder
  • 1 tsp store-bought minced garlic
  • 1 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 2 tsp vegetable oil
  • 1 1/2 kg rib of beef

Instructions

  • Preheat oven to 325 F. Combine ingredients, stir in oil
  • Rub spice evenly over surface of beef. Place meat in shallow roasting pan. Insert thermometer, not touching fat. Don't add water
  • Roast uncovered for 2 1/2 - 3 hours
  • Take roast out of the oven when meat thermometer registers 170 For more
  • Trim excess fat and carve into 1/4 inch slices
