Hope your day is off to a good start, friends! I’m sitting on my rocking chair at the moment, watching my cat, watching flurries. It was snowing much on Sunday to Monday, now it’s just light flurries.
I can’t find my favorite snow scraper, idk where it is, so I have been using my husband’s, which I don’t really like as his is way bigger than mine, and somewhat heavier. I am totally not ready for Winter π
I hope it’s still Autumn where you at, it’s nice when you get to enjoy Autumn longer π
Anyhoo! Back to recipe share. Winter makes me want to have pepperminty flavor π

2 c flour
1 tsp bsoda
A pinch of salt
1/2 c dark brown sugar
1/2 c semi sweet chocolate chips
2 eggs
1/2 sugar
2 tsp peppermint extract
1 c peanut oil
Preheat oven to 350 F
In a bowl, mix flour, baking soda, salt, dark brown sugar, and chocolate chips
In a food processor, mix peppermint extract, peanut oil, eggs and sugar
Pour wet ingredients into dry ingredients, and mix until completely combined
Drop by a cookie scoop, and bake for 8-10 minutes
Cool on rack before storing
