Although at the moment it’s super cloudy and meh, at least it’s Friday 😁 Do you have any special plans for the weekend? I am so looking forward to bake, and bake, and bake. Wel,l maybe just 1 sweet baked goods, i am thinking of creamy dessert, the rest are baking Shepherd’s Pie, or lasagna, maybe 😁 If I am not lazy, that is 😂
For today’s recipe though, soooo good, soooo fudgey, a tad sour, but sugar overload 😁 My rhubarb growing beautifully outside, and I still have a bag or two of frozen rhubarb from last harvest, so I started using them. Hence, this following brownies has some tangyness in it as it contains rhubarb 😍

1 c peanut oil
4 eggs
1 tbsp vanilla essence
1 1/3 c flour
2 c sugar (YIKES 🤣)
2 pinches of salt
1/2 c cocoa powder
1/2 c sugar free chocolate chips
1/2 c milk chocolate chips
1 heaping c frozen rhubarb slices (I may have added 1/4 c more 😍)
Mix flour, cocoa powder, salt, and sugar in a bowl, until completely combined
Beat eggs, oil, and vanilla essence on medium speed for about 1 minute, then pour mixture into dry ingredients, mix until just combined
Fold in chocolate chips and frozen rhubarb, do not overmixed
Bake brownies on preheated 350 F for 30-35 minutes, depending on your oven, on parchment lined rectangular pan
Cool, slice, and devour!
