Another chilly and cloudy morning here, just like yesterday and the day before. I’m missing the sun. Where did it go π π§π π§ I so hope tomorrow will be sunnier as I start volunteering at the hospital tomorrow π

I am rewatching Smallville and Everybody Loves Raymond these days as I don’t know anything good to watch π€£ My husband doesn’t really like me watching ELR as I relate so much and it gives him headache π€£ I would always say, yep, that happened to us as well. Ooooh, yep, so true, as that happened π I am so Debra and the rest of the characters are so from the other side π€£ He didn’t like it when I watched it years ago, and he still not liking it that I am rewatching it again π π π π
Anyways. Let’s talk for the following recipe. I called it as poor man’s tiramisu as I didn’t use macaroons nor liquor in mine. Still yummy, though π

2.5 sleeves of lady’s fingers
1 tbsp beef gelatin
3 tbsp water
1 block cream cheese
1/2 c icing sugar
Per Layer (so prepare twice):
1 tbsp Nescafe coffee granules
3 tbsp milk
1/3 c hot boiling water
1 c heavy whipping cream
1 cap of vanilla essence
Cocoa powder for topping
Soften beef gelatin in water, set to side
In a bowl, mix coffee, milk, and hot boiling water. Dip biscuits in coffee and lay them on the pan
In a separate bowl, beat cream cheese and icing sugar til creamy, set aside
In another bowl, whip heavy cream and vanilla essence until creamy. If needed or you like sweeter, add 2 tbsp icing sugar. Beat in softened gelatin
Mix whipped cream and cream cheese until completely combined, then spread half of it onto the 1st layer of moisten biscuits
Prepare another bowl of coffee mixture, dip biscuits and lay them on the cream. Once all biscuits used up, spread the rest of the cream
Sprinkle top with cocoa powder. Chill cake for 4 H or overnight before serving
Slice and enjoy!
