This year I have been so impatient for Spring to come. We have warm spells, crazy snow load, warm spells, another winter storm. Back and forth that I started planting seeds in January, what a wistful thinking, right 🤣 Living in the north and started to plant that early, when Winter is always until May 🤣🤣🤣🤣

If you like coconut, brown sugar, and creamy dessert. Try this Indonesian-Italian fusion 😊

1/2 c dark brown sugar
1/4 c water
1 pandan leaf, knotted
2 sleeves Ladysfinger
1 c heavy whipping cream
2-3 tbsp sugar
250 g cream cheese block
1/2 c unsweetened fine desiccated coconut
1 c milk
1 tsp pandan paste
1 tbsp brown sugar
Let’s make the brown sugar syrup first. In a pot, mix dark brown sugar, water, and pandan leaf. Simmer, don’t let it boil long time, just enough to dissolve sugar. Take off from heat.
Beat whipping cream and sugar until creamy, then add in desiccated coconut, set to side
Beat cream cheese block until creamy, then mix it into whipped cream
In a bowl, mix milk, pandan paste, and brown sugar, and heat mixture in microwave to slightly warm, 25-30 seconds
Dip ladysfingers in milk, lay them on pan and top with some cream. Repeat this step until all ladysfingers and cream are used up
Drizzle top with brown sugar syrup (at this point the syrup will be thickening), and chill for at least 4 H before serving. If you like, you can prepare the syrup much later, and drizzle it just before serving, it’s up to you

Ingredients
