Tabouli

Ingredients

  • 10-15 branches of curly parsley
  • 5-8 branches of Italian flat parsley
  • 3-5 branches of fresh mint
  • 3 green onions
  • 6-8 grape tomatoes
  • 1/3 c burghul

Instructions

  • 1/3 c burghul (fine ones), soak in 2 c water for 2 mins then microwave for 2 mins, drain
  • Chop parsleys and mint and green onions, finely/thinly
  • Pick mint leaves and chop finely as well
  • Slice/dice tomatoes (if using regular tomato, about 2)
  • Mix half of burghul and greens plus tomato in a large bowl
  • Season with salt and cracked black pepper
  • Stir in 1/8 c olive oil and 1/8 c lemon juice
  • Serve immediately
