1/3 c burghul (fine ones), soak in 2 c water for 2 mins then microwave for 2 mins, drain
Chop parsleys and mint and green onions, finely/thinly
Pick mint leaves and chop finely as well
Slice/dice tomatoes (if using regular tomato, about 2)
Mix half of burghul and greens plus tomato in a large bowl
Season with salt and cracked black pepper
Stir in 1/8 c olive oil and 1/8 c lemon juice
Serve immediately
