- Preheat your oven to 350 F 
- Mix flour, soda, and salt in a bowl. 
- In a separate bowl, cream sugar, eggs, paste, and oil. 
- Mix in dry ingredients until completely combined. 
- Spoon 1 tbsp of dough, flatten and fill center with demerara brown sugar, then shape into rounds. 
- Mix coconut with salt. 
- Roll cookie balls on coconut, place on ungreased cookie sheet, and flatten slightly. 
- Bake for 8-10 mins, cool on rack before storing.
