Bakpao

Ingredients

  • 1 1/4 c almond milk
  • 2 tbsp sugar
  • 1 heaping tsp active dry yeast
  • strawberry jam PB2, PB2+semisweet Choc chips, and semisweet Choc chips (accidentally vegan)

PB2 Filling

  • 2 tbsp PB2 plus 1 tsp icing sugar and enough maple syrup to make paste

Instructions

  • In a heatproof bowl, pour milk and sprinkle with sugar. Microwave to lukewarm, then sprinkle with yeast, stir. Let stand for 10 mins
  • In a separate bowl, mix 3 c flour with 2 tbsp soy milk powder (optional), 1 tbsp icing sugar and a pinch of salt.
  • Pour yeast mixture into flour mixture and knead
  • Cover with cling wrap and let stand for an H or until doubled in size
  • Once doubled, take about 35-45 g dough, flatten and fill with jam/vegan chocolate chips, peanut butter etc
  • Let rest for another half H
  • Meanwhile, preheat steamer
  • Steam buns for 5 mins

The dough makes 6 filled Choc chips, 4 jam, 4 PB2, 2 PB2+Choc chips
