Ooey Gooey Triple Choc Brownies

Ingredients

  • 2 medium size potato cubed, boiled, drained and mashed (makes 1 cup)
  • 3 tbsp oil
  • 1/2 tbsp vanilla essence
  • 1/2 c sugar more if you like it sweeter
  • 3/4 c almond milk
  • 3/4 c flour
  • 1 tsp each BP BSoda
  • A pinch or two salt
  • 1/4 c cocoa powder

Topping

  • Slivered almonds

Instructions

  • Mix potato, oil, essence, sugar, and almond milk
  • In another bowl mix dry ingredients
  • Mix dry ingredients into wet ingredients to combine
  • Preheat oven 350 F
  • Mix in 1/2 c Enjoy Life chocolate chunk and 1/2 c vegan semi sweet chocolate chips into batter
  • Line a square pan with aluminum foil and spray with oil
  • Pour batter into pan and sprinkle with almond
  • Bake for 30 mins
  • Cool on rack before slicing
