White Chocolate Avocado Muffins

Ingredients

  • 2 c flour
  • 1 tbsp double acting BP
  • A pinch of salt
  • 1/2 c pure cane brown sugar
  • 1 egg
  • 1 avocado
  • 3/4 c milk
  • 6 tbsp peanut oil
  • 1 tsp vanilla essence
  • White chocolate
  • Minute oats

Instructions

  • Grease muffin pan, set to side
  • In a bowl, mix flour, sugar, baking powder, and salt
  • Preheat oven to 400 F
  • In a food processor, combine avocado, egg, oil, milk, and essence well, then pour mixture into dry ingredients, mix until just combined
  • Spoon batter per 1/2 cup, into muffin pan, then push in 2 bars each of white chocolate in center
  • Sprinkle muffins with minute oats and bake for 20 minutes
  • Cool on rack slightly and serve, should you like to devour them when the chocolate still melting in the center
