Walnut Rolls

Ingredients

Filling

  • 3 c walnut fine meal
  • 1 c sugar
  • 2 tsp vanilla essence
  • 1 c milk

Skin

  • 1 kg flour
  • A pinch of salt
  • 400 g unsalted butter
  • 250 ml lukewarm milk
  • 1 tbsp sugar
  • 2.5 tsp active dry yeast
  • 100 g icing sugar
  • 2 yolks
  • 1 egg separate

Instructions

  • Let’s make the filling first.
  • Cook fine meal walnut, sugar, vanilla, and milk til bubbly and mixed well. Take off from heat and stir in a large handful golden raisins. Let cool to room temperature completely. This can be prepared a day in advance.
  • In a bowl, mix sugar, lukewarm water and yeast. Let stand til bubbly
  • In a bowl, mix flour, salt and butter til coarse, add in icing sugar, yolks, then pour in yeast. Knead
  • Divide dough into 3, wrap, let rest for 1 H
  • Roll flat dough, spread filling, roll as you would jelly roll. Brush with beaten yolks, let rest for 40 mins
  • Brush again with yolks, let rest for 20 mins
  • Poke holes and brush with egg white
  • Bake for at least 35 mins, on preheated 350 F
