Coconut Filled Fried Bread

Ingredients

  • 200 ml extra light tasting olive oil
  • 200 ml water
  • 1 egg
  • 1 cap vanilla essence
  • A pinch of salt
  • 3 1/4 – 4 c flour
  • 1/4 c sugar
  • 1 tbsp quick rise yeast

Filling

  • 250 g unsweetened desiccated coconut
  • 1 pandan leaf
  • 1/4 c coconut sugar
  • 1 tbsp sugar
  • 3 tbsp dark brown sugar
  • 100 ml water
  • Vegetable oil for frying

Instructions

  • Into a breadmaker machine pot, pour water, oil, salt, vanilla essence, and egg. Mix a little with wooden spoon so egg would scrambled.
  • Add flour, sugar and yeast. Click dough cycle
  • Meanwhile, cook sugars, knotted pandan, desiccated coconut, and water, until well combined and liquids gone, cool to room temperature
  • Divide dough for 45-55 g, let rest for 15 mins. Dough is pretty oily, it’s normal.
  • Once rested, flatten each and fill generously with coconut, shape into rounds. Let rest again for 30 minutes.
  • Fry bread until golden brown, turning once
