Tahu Telur

Ingredients

Peanut Sauce

  • 200-250 g roasted unsalted peanuts
  • 3 garlic
  • 2 red bird eye chilies
  • 200 ml water
  • 1 tsp soft shrimp paste petis
  • 1 tbsp tamarind paste
  • Enough water
  • 3-4 tbsp sweet soy sauce kecap manis
  • Salt to taste

Tahu Telur (Omelet)

  • 8 eggs
  • 1-2 blocks firm tofu
  • Salt
  • 2-4 tbsp cornstarch
  • Oil for frying.
  • Compressed rice
  • Beansprouts
  • Fried shallots

Instructions

  • Let’s make the peanut sauce first, by blending everything except tamarind paste, soft shrimp paste, and sweet soy sauce, in a food processor, until smooth texture. Pour mixture onto a pan, then add in tamarind and petis, stir to combine well, cook until bubbly, adding more water as needed, and sweetened slightly with sweet soy sauce (some like it sweeter, some like it spicy, so adjust to your liking)
  • Beat eggs and crush tofu roughly (or cube them if you like), mix in cornstarch and season with salt. Make omelet!
  • Serve omelet topped with either blanched or fresh beansprouts, along with lontong (compressed rice), and topped with peanut sauce. If you have, sprinkle fried shallots too and enjoy 🙂
