  • 4 skinned large tomatoes cubed
  • 1 green paprika thinly cubed
  • 1 cucumber thinly cubed
  • 1/2 watermelon you can puree it in a blender or just scoop with spoon or small size ice cream spoon/melon baller, or just cubed it
  • 900 ml chicken stock
  • 4 tbsp if not more wine vinegar/lemon juice
  • Salt pepper to taste or hot sauce
  • 1 tbsp oil can be olive, vegetable or even omit it


  • Boil water, pour onto tomato and soak them for 30 seconds, rinse with cold, and skin tomato --> for easy peasy and sleek skinned tomato
  • Combine all veggies and fruit in a large bowl
  • Add in rest of ingredients
  • Chill for at least 4 h before serving
  • Great if you also add in coriander leaves! Yummo
  • You can serve it as is or sprinkle with croutons!!
