Raspberry Oatmeal Muffins

Ingredients

  • 1/2 c sugar
  • 1 c milk
  • 6 tbsp peanut oil
  • 1 tsp vanilla essence
  • 2 eggs
  • 2 c flour
  • 1 tbsp BP
  • A pinch of salt
  • 1 tbsp grated lemon peel
  • 1 c frozen raspberry
  • Minute oats for topping

Instructions

  • Preheat oven to 400 F and grease muffin pan
  • In a food processor, combine eggs, milk, oil, sugar, and essence
  • In a clean bowl, combine flour, double acting baking powder, salt and lemon peel, then pour in egg mixture. Mix until just combined.
  • Fold in frozen raspberry and divide batter per 1/2 c and top each with minute oats
  • Bake for 20 minutes and cool on rack
