Bring sugar, milk, syrup to a full boil, until thermometer reads 238 F
Take off from heat, drop in margarine and essence, let stand for 10 minutes, do not stir
Beat in chopped walnut and keep beating (with spoon) until candy looks less glossy
Spray a square pan or mold before pouring the candy, and let stand til firm (about half H) before unmolding/slicing
