Fried Tuna Bread

Ingredients

  • 250 g flour
  • 1 tbsp sugar
  • 1 tbsp quick rise yeast
  • 1 egg
  • 100 ml coconut milk
  • 1/2 tsp salt

Filling

  • 3 garlic
  • 1 pandan leaf
  • 2 shallots
  • 2 tbsp coconut milk
  • 1 tsp olive oil
  • 1 tbsp olive oil
  • 1/8 tsp ground coriander
  • 1/8 tsp sweet paprika powder
  • Lemon basil leaves
  • 2 cans tuna flakes
  • Sugar salt, white pepper powder, cayenne powded, MSG (if using), to taste
  • Enough coconut milk might have said oil in the vlog
  • Vegetable oil for frying

Instructions

  • Mix flour, sugar, yeast in a bowl, then pour in coconut milk, followed with salt, knead. Cover with cling wrap and let rest for at least 30 minutes
  • Meanwhile, let’s prepare the filling
  • Mix garlic, shallot, pandan leaf, coconut milk, and olive oil in food processor, into fine paste. Pour paste into a pan, add more olive oil, along with ground coriander and sweet paprika powder. Saute til fragrant
  • Add in drained tuna flakes, coconut milk, seasoning and basil. Cook until liquid absorbed and filling kinda dry. Take off from heat, cool to room temperature
  • Divide dough into portions, roll flat, and place filling in center, seam to seal. Let rest for 20-30 minutes, or until doubled in size
  • Fry in medium heat, until golden brown, turning once
  • Enjoy!
