Meggyes Pite

Ingredients

  • 300 g unsalted butter
  • 250 g sugar
  • 1 envelope vanilla sugar
  • 450 g flour
  • 1 tsp double acting BP
  • A pinch of salt
  • 6 eggs
  • 200 ml milk
  • 1 large jar pitted red sour cherries in syrup

Instructions

  • Drain the cherries, and set to side. You can dispose the syrup or use for other baking.
  • Separate yolks from whites, beat whites until stiff
  • Mix flour, baking powder and salt in a bowl
  • On a separate bowl, cream butter and sugars, then beat in yolks
  • Add in flour to butter, alternating with milk, until completely combined, then fold in stiff egg whites
  • Spread batter on rectangular pan, and top with cherries
  • Bake on preheated 350 F for 50-60 minutes
  • Slice and enjoy 😊
