Lodeh Labu

chayote soup

Ingredients

  • A dozen of boiled eggs
  • 3-4 Chayotte
  • 1 bag of green beans
  • 1 tbsp unsalted butter
  • 4-5 garlic
  • 1 can of coconut milk
  • 2-3 cans of water
  • 2-3 tbsp chicken bouillon powder

Instructions

  • Peel boiled eggs from the skin, set aside
  • Peel chayote skin, rinse, then slice into finger length, set to side
  • Trim off green beans ends, slice, rinse, set to side
  • Thinly slice garlic
  • Melt butter and saute garlic til fragrant, then stir in veggies. Cook for 2 mins, then pour in coconut milk and water. Bring to boil until tender
  • Season with bouillon powder, drop in boiled eggs, cook for another 5 mins
  • Serve with rice or compressed rice cake (lontong/ketupat/buras)
