Lemon Zucchini Muffins

Ingredients

  • 200 g golden zucchini
  • 2 c flour
  • 1/3 c sugar
  • 1 tbsp double acting BP
  • 2 tbsp grated lemon peel
  • A pinch of salt
  • 2 eggs
  • 3/4 c heavy whipping cream
  • 4 tbsp extra light tasting olive oil
  • 1 tbsp lemon juice
  • 2/3 c semi sweet chocolate chips

Instructions

  • Cut zucchini into two, at 100 g each. Grate one, set aside, and place the other into a food processor, along with eggs, heavy whipping cream, lemon juice, and olive oil
  • In a bowl, mix flour, sugar, salt, and baking powder until completely combined, then pour in wet ingredients
  • Add in grated zucchini, mix everything, until just combined, then stir in chocolate chips. If you have a lemon or orange oil, add in a small drop or two, to enhance flavor
  • Divide batter into 6 portions at 1/2 c each into greased muffin pan, and bake for 18-22 minutes, on preheated 400 F
  • Cool on rack and enjoy
