Fudgy Pandan Swirl Brownies

Southeast Asian Flavor Twist

Ingredients

  • 1/2 c melted butter lukewarm
  • 1/4 c vegetable oil
  • 1 c sugar
  • 1/2 c brown sugar
  • 2 eggs
  • A cap of vanilla essence
  • 1 c flour
  • 1/2 c cocoa powder
  • A pinch of salt
  • 1/2 tsp BP

Pandan Swirl

  • 3 tbsp melted butter
  • 1/4 c sweetened condensed milk
  • 1 yolk
  • 1/2 c flour
  • 1/2 - 1 tsp pandan paste
  • 2 tbsp milk only if needed (if batter too thick)

Instructions

  • For the chocolate batter, whisk wet ingredients together until completely combined, then add in dry ingredients, but mix it until just combined.
  • Spread batter onto square pan, I use 8x8 inch pan
  • Then make the Pandan swirl, by mixing all the ingredients.
  • Spoon dollops of Pandan swirl on chocolate batter, with a skewer, make swirl but not too much that both batter will be combined too well. We want a nice swirl 😊
  • Bake brownies on preheated 350 F for 25-28 mins depending how fudgey you want your brownies to be. I noticed with with big oven, around 25-28, but for my counter top oven, 30 mins is good fudgey.
  • Let cool before slicing
