Double Chocolate Rhubarb Jam Cookies

Ingredients

  • 2 c flour
  • 1 tsp BSoda
  • A pinch of salt
  • 1/4 c sugar
  • 1/4 c cocoa powder
  • 1/3 c melted unsalted butter
  • 1/3 c homemade rhubarb jam
  • 2 eggs
  • 1/4 c sugar
  • 1 tsp vanilla essence
  • 1 large handful semi sweet chocolate chips

Instructions

  • In a bowl, mix cocoa powder, flour, sugar, baking soda, and salt until completely combined
  • In a food processor, mix eggs, jam, vanilla, sugar, until completely combined and pour into dry ingredients, as well melted butter, mix to combine well, then add in chocolate chips, mix again
  • Drop by a cookie scoop on aluminum foil lined pan, and bake on preheated 350 F for 10 minutes, move cookies to cooling rack
  • Enjoy!
