Twisted Cinnamon Sugar Doughnut

Ingredients

  • 1.5 c plus 2 tbsp flour about 200 g
  • 1/2 c milk about 100 ml
  • 35-38 g unsalted butter
  • 2 tbsp sugar
  • A pinch of salt
  • 3 tsp quick rise yeast
  • 1 egg
  • 2 tbsp flour
  • 4 tbsp sugar berry castor/superfine sugar
  • Generous pinches of cinnamon powder

Instructions

  • Heat milk for 20 seconds in microwave, then stir in yeast, set to side
  • In a small bowl, melt butter in microwave, for 15 seconds
  • On a separate bowl, beat eggs
  • In a bowl, mix flour, sugar, salt, then pour in melted butter, milk, and beaten egg, using wooden spoon
  • Cover bowl and let rise for 1 h
  • On a clean surface, spread flour, then dump dough, knead
  • Divide dough into 8 portions and roll each into a rope and then twist, pinching the end together
  • Let rise for 30 mins
  • Fry until golden brown, turning once
  • Meanwhile, mix sugar and cinnamon powder
  • Take out doughnut from the fryer, and coat it with cinnamon sugar
