Dadar Gulung

Ingredients

Filling

  • 1 bag of unsweetened desiccated coconut
  • 3/4 c brown sugar
  • a generous pinch of salt
  • 1 screwpine leaf
  • 1 tbsp cornstarch dissolved in 2 tbsp water
  • 150 ml water

Skin

  • 1 3/4 c + 1/3 c flour
  • 1 can coconut milk 400 ml
  • 200 ml water
  • a generous pinch of salt
  • 1 tsp pandan paste
  • 2 tbsp vegetable oil

Instructions

Filling

  • In a nonstick pan, mix everything until water evaporated
  • Set aside to cool

Skin

  • Mix everything in a bowl until no lumps
  • Brush non stick pan with a little vegetable oil, make thin crepes, cook on both sides
  • Grab one crepe, place 1-2 tbsp filling, roll as you would spring roll
  • Ready to serve, best while still warm
