Cranberry & Golden Raisin Fruitcake

Stays Moist For Days

Ingredients

  • 1 1/2 c dried cranberries
  • 1/2 c golden raisins
  • 2 tsp allspice powder
  • Salt generous pinch
  • 1/2 c dark brown sugar
  • 1/2 c sugar
  • 1/2 c water
  • 1/2 c orange juice
  • 1/2 c unsalted butter
  • 2 eggs
  • 1 1/2 c flour
  • 1 tsp BSoda

Instructions

  • Place dried fruits, sugars, salt, spices, water, juice, and butter in a pot, and bring to simmer for 5 minutes. Let cool to lukewarm or completely to room temperature, for 45-60 minutes
  • In a bowl, mix flour and baking soda, set a side
  • On a separate bowl, lightly beat the eggs
  • Once fruit mixture is no longer hot, stir in eggs, followed with flour mixture. Mix until just combined
  • Pour batter into parchment lined loaf pan and bake cake on preheated 325 F until knife inserted in center comes out clean (60-75 mins)
  • Let cake rest, before slicing. Flavor Will develop even more the next day and the cake is good for a whole week in the fridge.
