Chocolate Peppermint Edge

Ingredients

  • 1 c unsalted butter
  • 1 1/4 c flour
  • 1/2 c icing sugar
  • 1/4 c cornstarch
  • 1 cap peppermint essence
  • Peppermint hard candies
  • Semi sweet chocolate chips

Instructions

  • Mix dry ingredients in a bowl
  • Cream butter for 3-5 minutes then stir in peppermint essence, followed with dry ingredients. Knead into a log
  • Wrap dough and chill at 2 H if not overnight. Dough can also be frozen.
  • Slice and bake on preheated 300 F for 30 minutes
  • Cool completely
  • Meanwhile, crush some hard peppermint candies
  • Melt enough chocolate chips, dip one side of the cookies, and sprinkle with crushed candies
  • Let chocolate harden before storing
