Chicken Burrito Rice

Ingredients

  • 1/2 kg ground chicken
  • 2 tbsp unsalted butter
  • 1 Shallot
  • 3 garlic
  • 1 can sweet corn kernel
  • 2 tsp cumin powder
  • 1 tsp sweet paprika powder
  • 1 tsp ground coriander
  • Chicken bouillon powder
  • 1 1/4 c red kidney beans
  • Cooked rice enough for 6 servings
  • 1 bunch cilantro
  • 1 bunch green onion
  • 1-2 large red bell pepper
  • Cumin powder to taste
  • Chicken bouillon powder to taste
  • Lemon juice to taste

Instructions

  • Saute chicken til half cooked, add in butter, then stir in thinly sliced or diced shallot and garlic, cook until well done. Stir in corn kernels and rinsed canned red kidney beans season. Season. Take off from heat
  • Slice/dice bell pepper, cilantro, and green onion
  • In a large bowl, mix cooked rice and everything, add more seasoning and stir in a cap or two of lemon juice, combine well
  • Serve immediately and enjoy!
