Saute chicken til half cooked, add in butter, then stir in thinly sliced or diced shallot and garlic, cook until well done. Stir in corn kernels and rinsed canned red kidney beans season. Season. Take off from heat
Slice/dice bell pepper, cilantro, and green onion
In a large bowl, mix cooked rice and everything, add more seasoning and stir in a cap or two of lemon juice, combine well
