Chicken Biryani

Ingredients

  • 2 large onion
  • 1 c peanut oil
  • 1.6 kg chicken thighs boneless, skinless
  • 1 c plain yogurt
  • 2 c water
  • 1 box Biryani instant seasoning
  • 2 tomatoes
  • 2 c raw rice rinsed
  • Fresh mint
  • Fresh cilantro

Instructions

  • Dice onion, cube tomatoes, chop mint and cilantro, all separately
  • Saute diced onion in peanut oil til fragrant, then stir in chicken thighs, cook until whitish, then add in instant seasoning, cook for a minute or two
  • Add in yogurt and water, lower heat, and cover. Continue cooking until meat is cooked through and liquid is oily
  • Take off lid, stir in tomatoes, then add in rinsed rice. Cover again, continue cooking until rice is cooked, liquid absorbed, stirring occasionally, then stir in chopped mint and cilantro
  • Enjoy!
