Banana Butterscotch Muffins

Ingredients

  • 2 c flour
  • 1 tbsp BP
  • A pinch of salt
  • 1/2 c pure cane demerara brown sugar
  • 2 banana
  • 6 tbsp olive oil
  • 1/2 c milk
  • 2 eggs
  • 1 cap vanilla essence
  • 1/2 c butterscotch chips
  • Chia seeds optional

Instructions

  • Preheat oven to 400 F and grease muffin pan
  • In a bowl, mix flour, baking powder, salt and cane brown sugar, set a side
  • Using food processor, mix bananas, milk, olive oil, and vanilla essence, plus egg, until completely combined and pour mixture into dry ingredients
  • Mix until just combined, while folding in butterscotch chips
  • Divide batter and sprinkle lightly with chia seeds
  • Bake muffins for 18-20 minutes, cool on rack
  • Enjoy!
