Moist Zucchini Cookies

Ingredients

  • 1/2 c butter/margarine
  • 1/2 c sugar
  • 1 egg lightly beaten
  • 1 tbsp vanilla essence+water
  • 1 medium large banana pureed
  • 1 1/2 c grated zucchini
  • 1 1/2 c AP flour
  • 1/2 tsp bsoda
  • 1/2 tsp cinnamon powder
  • 1/2 tsp allspice powder
  • 2 c quick oats
  • 1/4 c raisins

Instructions

  • Preheat oven 350 F
  • Soak raisins in 1 tbsp vanilla essence+water enough to just cover the raisins, set aside
  • Cream margarine+sugar until fluffy with mixer, turn it off
  • Add in egg and vanilla essence mixture from the soaked raisins, stir to combine
  • Add in zucchini, stir to combine then pour in pureed banana, stir to combine
  • Mix flour, allspice, cinnamon and soda, add into zucchini, stir to combine well
  • Add in oats and raisins, stir well
  • Drop by tablespoon, bake for 10 mins, and leave on tray for 2 mins before placing on cookie rack to cool
