Banana Bread-Cake

Equipment

  • orzgerinc pan

Ingredients

  • 2 c. whole wheat flour
  • 1 tsp. baking soda
  • 1/2 c. oil
  • 1/2 c. honey
  • 1 grated lemon rind
  • 1/2 - 1 tsp freshly squeezed lemon juice
  • 2 eggs
  • 2 ripe bananas
  • a dash of salt
  • 1 handful nuts chopped
  • 1 handful raisins

Decoration

  • 1 envelope Dr. Oetker marzipan icing
  • Lemon rind curls

Instructions

  • Mix together dry ingredients.
  • Mix oil, honey and lemon rind until smooth.
  • Beat in eggs one at a time.
  • Add dry ingredients in 2 equal parts alternating with banana, beating until smooth after each addition.
  • Add in chopped nuts and raisins.
  • Pour batter into a large greased and floured loaf or orzgerinc pan.
  • Bake 50-60 minutes at 350 F degrees (until knife inserted in the center comes out dry)
  • Cool 5 minutes before removing from pan.
  • Cool 1/2 hour further before decorating.

Decoration

  • Follow the instruction on the package, spread on cake, add some lemon curls
