Creamy Pasta

Ingredients

  • 3 c dry macaroni
  • Enough hot water
  • 2 medium potato cubed
  • 2 carrots sliced
  • 1/4 - 1/3 c canned peas drained
  • 1/4 c canned corn drained
  • 1 bunch cilantro only the leaf
  • 1 medium onion quartered
  • 4 cloves of garlic sliced
  • Enough water
  • Salt to taste
  • 1/3 c raw cashew
  • Enough hot boiling water
  • 1/2 - 3/4 c veggie broth
  • 4 tbsp nutritional yeast
  • Salt to taste
  • Vegeta powder to taste

Instructions

  • Soak cashew in hot boiling water for at least 30 mins
  • Cook veggies, onion, garlic, until tender (the water measurement is just enough to cover veggies). Do not drain.
  • Meanwhile, pour hot boiling water on macaroni, stir, microwave for 9-12 mins
  • Into food processor, blend veggies and it's broth, drained soaked cashew, and veggie broth into creamy paste.
  • Stir in yeast, salt, Vegeta
  • Once flavor is good to your liking, stir in cooked pasta
  • Serve immediately
