Cranberry Muffin

Equipment

  • paper cups for baking

Ingredients

  • 1 bag fresh cranberries
  • 1 teaspoon of baking powder
  • 2 tablespoon raisins
  • 16 dkg all purposes flour 160 grams
  • 1 tablespoon fresh grated skin of lemon
  • 12,5 dkg unsalted butter not frozen one, soft but not too soft, 125 grams
  • 12 dkg sugar 120 grams
  • 2 eggs

Instructions

  • Mix all ingredients but cranberries, using food mixer, until everything blended as one and smooth.
  • Place three or four spoons of the mixture into the paper cups, then drop 1 or 2 cranberries in each cups.
  • Bake in 180 C until cooked nicely golden brown
