Banana Butter Rolls

Ingredients

Dough

  • 1 c cashew milk lukewarm
  • 1 tbsp sugar
  • 2 tsp active dry yeast
  • 1/4 c melted df butter/margarine
  • 3 1/2 c bread flour
  • 1/3 c sugar
  • A generous pinch of salt

Banana Butter

  • 3 ripe bananas
  • 1/4 c sugar
  • 1-2 tbsp lemon juice
  • 2-3 tbsp cornstarch

Topping

  • Extra lemon juice optional
  • Brown sugar for sprinkling optional

Instructions

  • Mix sugar in milk, sprinkle yeast in, let stand till bubbly
  • Mix in melted fat
  • In a bowl, mix flour, sugar and salt, pour in wet ingredients, knead
  • Cover with cling, let rest for 30 mins

Butter

  • Meanwhile make the butter by mashing the bananas and mixing it with sugar
  • Add in juice and starch
  • Cook in microwave until thickened (2 mins total, 30 secs intervals)

Rolls

  • Roll dough, spread banana butter, sprinkle with sugar
  • Roll and seam to seal
  • Slice and place on pan, let rest until doubled in size
  • Bake on preheated 350 F, 25 minutes
  • Brush the top with lemon juice, then sprinkle with brown sugar
  • Bake for another 5-10 minutes
