Choc Chips and Pumpkin Seeds Sourdough Loaf

Ingredients

  • 1 tbsp sourdough starter
  • 100 g bread flour
  • 100 g lukewarm water
  • 1 kg bread flour
  • 700 g lukewarm water
  • 20 g salt
  • 50 g water
  • 1 handful df choc chips
  • 1 handful raw pepitas

Instructions

  • Mix and let stand 6 H starter, flour, water
  • Add in more flour and water, let rest 1 H
  • Add in salt, water, choc chips and pepitas, let rest again 1 H
  • Di French fold 4 times (1 set), let rest 30 mins
  • Do another set, let rest, 30 mins
  • Do another set, let rest, 30 mins
  • Let rest 4 H
  • Divide into 2, let rest 20 mins
  • Place into proofing basket
  • Let rest in the fridge over night
  • Bake at preheated 450 F covered 30 mins
  • Take off cover, bake 25-30 mins
  • Cool on rack 1 H before slicing
