Vegan Bakpao

Ingredients

  • 1 1/4 c almond milk
  • 2 tbsp sugar
  • 1 heaping tsp active dry yeast

Filling

  • 2 tbsp sliced onion
  • 1 tbsp cooking oil
  • 3 mushroom buttons chopped
  • 2 tbsp dehydrated veggies soaked in hot boiling water to soften, drain
  • 1/2 c TVP soaked in hot boiling water for 2 mins
  • Maggi liquid seasoning to taste
  • 1 tsp cumin powder
  • 1 tsp paprika powder
  • 1 tbsp hoisin sauce
  • Vegeta powder to taste

Instructions

  • In a heatproof bowl, pour milk and sprinkle with sugar. Microwave to lukewarm, then sprinkle with yeast, stir. Let stand for 10 mins
  • In a separate bowl, mix 3 c flour with 2 tbsp soy milk powder (optional), 1 tbsp icing sugar and a pinch of salt.
  • Pour yeast mixture into flour mixture and knead
  • Cover with cling wrap and let stand for an H or until doubled in size
  • Once doubled, take about 35-45 g dough, flatten and fill , top with green onion sliced, seam to seal
  • Let rest for another half H
  • Meanwhile, preheat steamer
  • Steam buns for 5 mins

Filling

  • Heat oil, saute onion and mushrooms
  • Add in the rest, adjust seasoning
