Blackforest Cheesecake

Ingredients

Crust

  • 2 sleeves of Oreo cookies or chocolate Graham/other dark, chocolate flavor, cookies
  • 1/4 – 1/2 c unsalted butter

Batter

  • 2 blocks cream cheese
  • 1/2 c sugar
  • 1/2 tsp vanilla essence
  • 2 eggs

Filling

  • 1 can cherry pie filling

Topping

  • 1/2 c semisweet chocolate chips
  • 1/4 c hot boiling water

Serving

  • Sweet whipped cream
  • Chocolate pieces

Instructions

  • Crush cookies then mix with melted butter. Press firmly on springform pan.
  • Cream sugar and cream cheese, beat in essence, until smooth, then beat in eggs, until just combined.
  • Pour 1 c of batter onto crush, spread evenly
  • Top with cherry pie filling, then pour the rest of the batter.
  • Bake cheesecake at preheated 325 F until center is somewhat set (40 mins). Cool to room temperature completely before chilling in the fridge over night.
  • Take out cheesecake from fridge, set aside. Now let’s make the topping. In a bowl, pour hot boiling water onto chocolate chips, stir to melt. Pour onto cheesecake. It will set almost within minutes.
  • Garnish with whipped cream, decorated wit chocolate pieces, slice and serve. Yummo!
