Bundt Cake

Ingredients

  • 2 1/2 c flour
  • 2 tsp BP
  • 1/2 - 1 tsp fine sea salt
  • 1 c unsalted butter
  • 1/4 c extra light olive oil
  • 1 1/2 c sugar
  • 5 eggs
  • 3/4 c buttermilk
  • 1 tsp vanilla essence
  • 1 tbsp lime juice
  • 1/2 c icing sugar
  • 2 tsp each lime juice and Cointreau orange liquor

Instructions

  • Mix flour, BP, salt in a bowl
  • Cream butter, add in olive oil
  • Beat in sugar
  • Beat in 1 egg at a time
  • Add in dry ingredients a little at a time, alternating with buttermilk, and essence plus lime juice
  • Do not overmixed.
  • Dump batter onto greased and floured bundt pan, tap a couple of times to remove air bubbles
  • Bake on preheated 325 F, 60 mins
  • Let cool in pan before cooling on rack
  • Let cool completely before glazing (mix icing sugar with lime juice and Cointreau)
