Super Easy Mini Quiche

Ingredients

Skin

  • 1 1/2 c flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 c oil
  • 2 tbsp milk

Quiche

  • 3 eggs
  • 1 bunch of green onion thinly sliced
  • salt pepper, grated nutmeg, to taste
  • 1/2 c each heavy cream and milk
  • a generous tbsp butter melted
  • enough grated cheese

Instructions

Skin

  • Combine dry ingredients in a bowl, stir
  • Pour in oil and milk, mix to form a ball
  • Divide into 2 dozens small dough
  • Press each dough into mini cupcake pan

Quiche

  • With wire whisk, beat eggs, seasonings, green onion
  • Stir in melted butter
  • Place grated cheese into prepared base
  • Pour egg mixture on top of cheese
  • Bake on preheated 350 F for 25 mins
  • Cool on rack

Notes

If you want to freeze them, cool quiche completely to room temperature before freezing :)
