Grilled Chicken Adobo


  • chicken pieces about 3 pounds, you can slice 1 whole chicken to pieces, you can use just drumsticks, etc
  • 1/2 c soy sauce
  • 3/4 c white vinegar
  • 1 heads garlic
  • 2 bay leaves
  • 1/2 tbsp peppercorns
  • salt to taste


  • Boil chicken with soy sauce, vinegar, garlic, bay leaves and peppercorns and simmer for half an hour in medium heat, turning occasionally.
  • Remove chicken pieces from the pot and broil them in oven (or ember of charcoal) for 10 minutes.
  • Meanwhile, let the sauce in the pot boil until it is reduced by half. Add salt to taste. Cover the broiled chicken pieces with the sauce.
  • Serve immediately with warm rice.
