Candy Cookie Bars

Ingredients

  • 1 c each sugar and coconut palm sugar
  • 1 c coconut oil melted
  • 6 tbsp aquafaba
  • 1 tbsp vanilla essence
  • A pinch or two of salt
  • 2 c flour
  • 2 c candies I used assorted jelly beans, white chocolate chips and skittles - be aware that if you use too much of jelly beans/skittles, once melted jelly beans are cooled, they hardened too much, will affect the cookies, too hard to bite. So use more choc chips/mnms, compare to chewy candies. I got a bag of great value jellybeans from Walmart, it is soooo awesome. Differ color really differ in flavor, making the cookie bars so flavorful!, Chopped
  • Additional candies

Instructions

  • Preheat oven 350 F
  • Mix sugar and melted coconut oil with whisk balloon, for about 8 mins
  • Whisk in aquafaba and essence, then salt and flour
  • Stir in chopped candies and pour into aluminum/parchment paper lined pan
  • Sprinkle with a little additional candies
  • Baked for 45 mins, take out and press some more additional candies and let it cool before slicing into bars
