Soto Ayam

Ingredients

Paste

  • 1/2 of a small onion
  • 5 candle nuts
  • 1/4 c water

Soup

  • Half pot of water
  • 2 skinless boneless chicken breast
  • 1 lemongrass
  • 7-8 cloves
  • 4-5 kaffir lime leaves
  • 2 tbsp grapeseed oil
  • 1/8 tsp turmeric powder
  • 1/2 tsp ground coriander
  • 2 tsp minced garlic
  • Vegeta powder to taste or a combo of salt, sugar, MSG or salt, MSG, vegetable rice powder
  • A generous pinch ground white pepper

Serving

  • Hard boiled eggs
  • Sweet soy sauce kecap manis
  • Sriracha sauce or sambal soto
  • Fried onions
  • Chives best green onions
  • Bean sprouts and/or shredded cabbage

Instructions

  • In a food processor, turn onion, candle nuts, and water into a fine paste
  • Boil chicken and remove scums
  • Add in lemon grass, cloves, and kaffir lime leaves
  • On a nonstick pan, cook paste, garlic, turmeric, and coriander in grapeseed oil
  • Pour mixture into the chicken pot, continue boiling
  • Season with Vegeta powder and white pepper
  • Place cooked rice into a bowl
  • Top with shredded boiled chicken and halved boiled egg
  • Sprinkle with fried onions and chives, pour hot soup
  • Serve immediately, and if you like, with soy sauce, Sriracha, and bean sprouts
