Lemon Loaf

Ingredients

  • 1 1/2 c flour
  • 3/4 c sugar
  • 3 tsp baking powder
  • a pinch of salt
  • 1 tbsp lemon juice
  • grated of lemon peel
  • 100 ml vegetable oil
  • 170 ml water
  • 1/2 tsp vanilla essence

Icing

  • 2 large bananas
  • 1/2 c icing sugar
  • 1 1/2 tsp lemon juice
  • 1/2 tsp vanilla essence

Instructions

  • Preheat oven to 375 F
  • Grease a loaf pan and line with parchment paper, set aside
  • In a bowl, mix flour, sugar, salt, lemon peel, and baking powder
  • Make a well in the center and pour in oil, water, essence and juice, mix to combine
  • Pour batter into prepared loaf pan and bake for 35-45 minutes or until a knife inserted in center comes out clean, cool cake on cookie rack

Icing

  • In a heatproof bowl, mash bananas
  • Stir in the rest of ingredients
  • Using double boiler method, beat icing for 7 mins
  • Cool to room temperature
  • Spread icing on cake
