Vegan Pepperoni

Ingredients

  • 1/2 cup of pressure cooked red kidney beans mixed with black eyed mash
  • 1 cup cold water
  • 1 tbsp olive oil
  • 1 tsp liquid smoke
  • 1 tsp BBQ sauce
  • 1 tbsp paprika powder
  • 1/4 tsp cayenne powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 anise star
  • Freshly cracked black peppee
  • 1 tsp chili flakes
  • 1 1/4 cups vital wheat gluten

Instructions

  • Using mortar and pestle, grind chili flakes and star anise
  • Mix wet ingredients
  • Add in ground star anise
  • Mix in gluten with a fork
  • Divide into 3, wrap in foil
  • Steam for 45 mins (preheat the steamer first!)
