Urap Sayur

Ingredients

  • 1 bunch of long beans
  • 1/2 head of large cabbage
  • 700 g fresh spinach
  • 1 bag bean sprouts
  • 1 long English Cucumber or more, or none, so optional ?
  • 1 bag unsweetened dessicated coconut
  • 1 small onion
  • 5 garlic
  • 5-8 red bird eye chilies 1 if you don't like spicy but still wants to get a little taste, or none is fine too
  • 1/2 tsp lesser galangal powder kencur
  • Salt and sugar to taste

Instructions

  • Bring water to a boil, add a little salt
  • Boil cabbage and long beans until tender
  • Take out veggies, place into a large bowl
  • With the leftover hot boiling water, blanch spinach and bean sprouts
  • Take out veggies and add them into the bowl
  • In a food processor, add in onion, garlic, chilies
  • Pour in 1/4 c water, process into fine mixture
  • Pour mixture onto a pan, add in kencur, salt and sugar to taste
  • Bring to boil
  • Stir in coconut, and mix to combine
  • Spoon spiced coconut into veggies bowl, mix to combine
  • Ready to serve
