Fluffy Chicken Taco Steamed Buns

Ingredients

Filling

  • 1 chicken breast
  • 1 can chicken broth
  • 1 Indonesian bay leaf daun salam
  • 1-2 kaffir lime leaf optional
  • 1/4 tbsp I think my mouth said 1/2 tbsp in the video tho lol Vegeta seasoning
  • 1/2 tbsp each garlic and onion powder
  • A generous pinch of ginger powder
  • A pinch of white pepper powder
  • A generous pinch of ground cumin
  • 1-2 drops of sesame oil
  • At least 1/2 tbsp of Indonesian sweet soy sauce up to 2-3 tbsp
  • 1 large carrots
  • 5 boiled eggs
  • At least 2 tsp taco seasoning

Skin

  • 1 1/4 c lukewarm milk
  • 1/4 - 1/2 c lukewarm water
  • 1 tbsp sugar
  • 2 tsp active dry yeast
  • 3 c strong baker's flour
  • A pinch of fine sea salt

Instructions

  • Boil chicken in broth with the rest of the ingredients until broth much lessen. Discard leaves. Add in carrots, cook til soften and broth almost gone.
  • Take off from heat, shred chicken with forks
  • Mix in chopped boiled eggs
  • Stir in taco seasoning
  • Set to side to cool down
  • Make skin

Skin

  • Mix milk, water, and heat to lukewarm
  • Add in sugar and sprinkle with yeast
  • Let stand to bloom
  • In a bowl, mix flour and salt, then pour in yeast mixture, knead
  • Let rest

Steamed Buns

  • Divide dough, flatten, fill, seam to seal
  • Let rest buns
  • Preheat steamers, steam buns for 15 mins
