Homemade Lemon Curd

Ingredients

  • 600 g lemon
  • 2 c sugar
  • 4 eggs
  • 110 g butter

Instructions

  • Grate lemon skin (or peel and chop them), set aside
  • Squeeze lemon for the juice, set aside
  • Whisk sugar and lemon til combined
  • Bring to a boiling point, keep stirring, until thickening
  • Add in the skin, juice, and butter
  • Keep boiling til thickened, stirring continuously
  • Slightly cool it before filling the jars
