Hungarian floating island


  • 1 L milk
  • 4 eggs separate yolks from whites
  • Enough sugar about 4-6 tbsp, depending your liking
  • 1 envelope vanilla sugar


  • Bring milk to boil
  • Meanwhile, in a bowl, whisk yolks with enough sugar and vanilla sugar
  • On a separate bowl, beat egg whites until stiff, adding 1 tbsp sugar, a little at a time
  • Once milk is fully boiled, take off milk from stove
  • Take out a little milk, stir into yolk mixture
  • Pour yolk mixture into the pot, stir quickly, then top with whipped egg whites/meringue
  • Serve immediately


you can also top boiled milk with egg whites first, let it boil a bit, then stir in yolk mixture
