Citrus Chicken Salad


  • 3 skinless chicken breast portions
  • 2 oranges
  • 1/2 tsp dijon mustard
  • 1 1/2 tsp honey
  • 2 tbsp olive oil
  • 1 1/2 c finely shredded cabbage
  • 150 g carrots slice thinly
  • 1 green onion
  • 1 celery stick cut into batons
  • 1 tbsp chopped fresh tarragon
  • 1 lime
  • salt and black pepper to taste


  • Grill chicken under preheated broiler and cook for 5 mins on each side, until golden brown and cooked through. Set aside to cool
  • Peel oranges, cutting off all pit and get the segments, set aside
  • Grate the rind and juice out of one of the oranges, place into a bowl
  • Stir in mustard, 1 tsp of honey, oil, seasoning into orange juice
  • Mix in cabbage, carrots, green onion and celery and let stand for 5 minutes
  • Squeeze the juice of the remaining orange and mix with remaining honey and tarragon
  • Peel and segment the lime and lightly mix the segment into the dressing with the reserved orange segment and seasoning to taste
  • Slice chicken and stir into the dressing with the citrus
  • Place cabbage into plate, add chicken, and serve
