Banana Rum Coconut Dessert

microwave recipe


  • 1/4 c palm coconut sugar
  • 1 tbsp salted butter/margarine
  • 1/2 tbsp lime juice
  • 1/2 tbsp Jamaican rum
  • freshly grated nutmeg


  • Add all into a heat proof cup and cook on high on microwave for 1 minute, stir
  • Slice a medium ripe banana as shown then microwave uncovered, for a minute
  • Spoon half of sauce onto banana and microwave banana again for 50 seconds
  • Take out of microwave, pour left over sauce and sprinkle with unsweetened desiccated coconut and serve immediately
